Peppercorns grow in clusters along climbing vines. Black pepper is produced by harvesting the green peppercorns before they are ripe. Following the drying process in the sun for several days, the green peppercorns start to wrinkle and they gather their final colour, becoming black peppercorns. They are then sorted and graded. Grind these pepercorns at the last minute to bring out their powerful flavour.
